Introducing: Tiger – nut and Coconut Milk Yoghurt – a creamy, plant-based milk yoghurt packed with nutrients to support growing children and nourish entire families. 

🌰 What Are Tiger nuts? 

Despite their name, tiger nuts aren’t nuts at all, they’re small, wrinkled tubers that grow underground. Also known locally as aya (Hausa), aki hausa (Igbo), or ofio (Yoruba), tiger nuts have long been valued in African diets for their naturally sweet flavor and impressive health benefits. 

Tiger nuts are: 

  • Rich in fiber, supporting healthy digestion 
  • A source of iron, magnesium, and potassium 
  • Packed with healthy fats and natural sugars, ideal for children’s energy and development 
  • Naturally sweet, helping reduce the need for added sugar

It’s a low-cost, sustainable alternative to store-bought milk products and requires no special equipment or additives.  

🥥 Tiger nut and Coconut Milk Yoghurt Recipe 

Ingredients: 

  • 3 medium-sized coconuts (fresh) 
  • 1.5 kg tiger nuts (soaked weight) 
  • 3 liters of clean water 

Directions: 

  1. Clean the Tiger nuts 
    Wash thoroughly in running clean water. Rinse at least 3 times to remove dirt. 
  2. Ferment the Tigernuts 
    Soak the cleaned tiger nuts in 5 liters of water and allow to ferment for 3 days at room temperature. 
  3. Prepare the Coconuts 
    Crack open the coconuts and remove the white meat. Chop into small pieces. 
  4. Blend  
    After fermentation, drain and rinse the tiger nuts. Blend together the coconut meal, add 3 liters of clean water until smooth. 
  5. Strain and Enjoy 
    Use a clean muslin cloth or sieve to strain the mixture into a bowl or jar. Store in a cool place or refrigerate. Serve as a refreshing drink or gently warm for a thicker yoghurt-like texture.
